Bridesmaid Vs. Christmas Cookies

My cousin is an incredibly intelligent guy. He's an MIT graduate, a complete computer guru and, for fun, experiments with vegan cooking-- he also has a food blog where he creates ridiculously complicated dishes. He's a wonder child. I am jealous.

In a few short weeks, he will be marrying an equally intelligent girl, whom I also adore. And I am standing as a bridesmaid in the wedding.

I've done my due diligence as a bridesmaid. I've attended every bridal shower, helped to organize an insanely successful Bachelorette Party- complete with phallus shaped cake which I will not showcase on this blog... And now- sigh- I am joyously doing my part to contribute to their special day... helping to bake Christmas cookies. I know... weird. Not really though. Along with having a much higher IQ than undoubtedly you and I, and your mom combined, Mr. and Mrs. Smartypants are also Christmas Cookie Connoisseurs.

I am honored to be a bridesmaid, and more than happy to ensure they can provide a bounteous Christmas cookie table for their fabulous guests. So happy in fact, that I spent today baking 72 cookies- actually 65- 12 of them were burnt at the bottom :)

Below I've included an extremely easy recipe I borrowed from AllRecipes.com for the little gems that will be gracing the Smartypants' Wedding Christmas Cookie table...

Peanut Butter Kiss Cookies

- 1 cup white sugar
- 1 cup peanut butter
- 1 egg
- 18 milk chocolate kisses

Yields 18 decadent cookies

1. Preheat oven to 350 degrees fahrenheit.
2. Combine sugar, peanut butter, and egg.
3. Shape into 1 inch balls and place on ungreased cookie sheet. NOTE: If dough is too sticky, refrigerate 1/2 hour or until easy to handle.
4. Bake for 10 minutes. Remove cookies from oven. Press a chocolate kiss into the center of each warm cookie.

Bake 'Em and Enjoy 'Em Baby!

Take Care,

Stephanie

Nice to meet you.

Hi. My name is Stephanie and this is just another food blog. Thanks for visiting- hopefully you will find something interesting and decide to stay for a while.

A little bit about me- I can't cook- seriously.

I try, but to be honest there is usually always something wrong with my cooking.

Exhibit A:
One time I made romantic rosemary potato wedges for a boyfriend over a beautiful salmon dinner. My "romantic" potatoes were raw. Nothing sexy about raw potatoes, folks. I mean have you ever eaten a raw potato? I think I'd rather give myself a swirlie.

Exhibit B:
On Thanksgiving I decided to contribute to the holiday feast by preparing some asparagus. A-S-P-A-R-A-G-U-S. I prepared said veggies as any normal girl would... in a pan, with some olive oil and a bit of garlic for a kick. During dinner everyone raved about the flavor in the stuffing, the moistness of the turkey, how amazing are these sweet potatoes blah blah blah.

I anxiously awaited for the review of my asparagus. The little bastards betrayed me. One of our guests suggested that the asparagus were a bit "Al Dente." I didn't know what that meant until another person piped-up to say, "Yes, I rarely eat asparagus raw, but it's not so bad." Cue all eyes on me....

That's when I decided to start this blog. Needless to say, I'll be working from recipes... I hope you enjoy my blog. And if you are courageous enough to try a dish I prepare, I hope you don't get food poisoning.

Take Care!

Stephanie
